Opened the tin expecting just another sardine, and the extra virgin olive oil gave this vintage such a deep, rich taste that I ended up eating the whole thing straight from the jar. The mature flavor is exactly what I’d hoped for after reading about the aging process.
The tin itself is a little piece of art, almost too pretty to open, but once I did, the sardines were melt-in-your-mouth tender with that deep, elegant taste the aging in olive oil promises. I've already ordered another one to save for a special occasion.
The jar sat on my shelf for a year before I opened it, and the depth of flavor from that aging is unreal—the olive oil has a rich, nutty finish that clings to each sardine. You can tell they were packed with care, the flesh stays firm but melts apart on the tongue. Definitely worth the wait.
