The texture really surprised me — firm flakes that hold together on the fork instead of falling apart. You can taste the cold-water thing they talk about, it's clean and not overly salty. Grilled it quick with just butter and lemon and it was gone in minutes.
Opened the tin expecting mushy fish, but the meat is firm and flaky with that clean, briny taste you only get from really cold water. The quick grilling leaves a subtle char that makes it perfect straight out of the can on a cracker. I've already ordered two more.
The packaging kept the fillet perfectly intact during shipping, and after a quick sear it tasted incredibly clean and fresh—no fishy smell at all. I've had salmon from all over, but the texture here is something else, firm yet buttery. Definitely restocking this one.
