The coarse crystals don't dissolve instantly like table salt, so you actually get little crunchy bursts of sea flavor on steak and grilled fish. I've gone through half the bag just using it to finish dishes at the table.
Sprinkled this over grilled vegetables and the flakes gave a nice little crunch instead of just disappearing. Being sea-salt crystals from evaporation, it feels less processed than the fine stuff I used before.
